"Carrot - the modern fruit - has very citrus taste, it is moist and has a great texture. It is a good firm base for icing and has at least a 10 day shelf life which works well for wedding cakes."

"Chocolate mud, is a wickedly chocolatey, moist, rich cake filled with chocolate ganache buttercream. It is very sweet, so can easily be served as finger portions if required, which makes it a good option for weddings."

"As for fruit cake, I love the way the flavours of all the fruits and brandy develop in my mouth, it is a real special occasion cake. It is also my favourite base to ice as there is no torting required, so therefore no bulges to cover!"
